southern roots

last night i decided to enjoy my southern roots (i am from the beautiful state of virginia!) and cook up a good southern dinner.  well, my sweet husband and i cooked the meal together.  we made southern fried chicken... you know, the totally not healthy for you, cooked in shortening, with the skin on chicken.  along with that we had biscuits, gravy and succotash.  i have been trying to find a biscuit recipe that i really like and want to stick with... i found one here.  i think this is my favorite so far.  they turned out great!  we only had these two left...


in addition to the dinner, i made my 'famous' cobbler.  this one was made with what's left of last year's frozen raspberries from our raspberry patch on the side of our house.  we filled 8 gallon baggies up with last year's harvest!  so, as this year's crop starts to come in... we best use up the other.  and there is NO better way than with this cobbler.



here is the recipe for the cobbler in case you might like to give it a try.  i have made raspberry, blueberry, and mixed berry cobbler with the recipe, and they all turn out deeeeelish!

Bestest Fruit Cobbler Around
(for 9x9 pan)
1 stick butter, melted
1/2 cup milk
1 cup flour
2 tsp baking powder
1/4 tsp salt
1/2 sugar
1 tsp vanilla
1/2 cup hot water
1 cup sugar

*line your pan with unsweetened fruit or berries.  (i fill mine about half way up the pan)
*combine butter, 1/2 cup sugar, milk, flour, baking powder, salt and vanilla to make batter.
*spread batter over fruit.
*combine 1 cup sugar with the water and pour over batter.
*bake at 350 degrees for about 1 hour.

i usually double this recipe for a 13" x 9" pan.

i'm baaaaack!

wow!  that month went so fast.  the more years i add to my age... the faster the months go by.  what's up with that?  i really want to take time this summer to slow down and enjoy the amazing life i have been blessed with.  i want to take a minute each day and appreciate the little things that happened that day.  in honor of this, here are some highlights of what has been going on for the past month (since i wasn't able to keep up with blogging everyday)...

my mother-in-law & her husband, tone (our son), my dad & mom, and my husband at
our daughter and son-in-law's graduation from Ohio State University!
my husband and i celebrated our 25th wedding anniversary!! woo-hoo! 
i love that man!

i found the cemetary in low moor, virginia where my great-grandparents are buried.

on our adventures, my sweetie got to do a little fly-fishing on the jackson river.

we spent 4 days at young life's rockbridge alum springs camp near lexington, virginia.
it was an amazing week!

i can't even explain how much i loved this place.

and... i just today finished the wonky block quilt for my mom!  i think it turned out great... i even got a little fancier on the back.  

 now i am back on track... and looking forward to the rest of a great summer!  what are you doing this summer??
